Here is a helpful section of our site that most catering companies would never dream of setting up for the public. We will share our recipes with you so that you can try them out at home. We're just a little different here at Simply Elegant, and as much as we love serving up the meals for parties all over the region, we also recognize that there are things you can do at home, courtesy of us!

Each month, our chefs will post recipes for you to try out and impress friends and family with your cooking, baking, and grilling skills.

Pistachio Lime Mousse

Paul prepared this on "The Good Day Show" with Eileen Prose while employed with the Seasons Resturaunt at The Bostonian.

Step One: Pastry Cream with Lime

2-3 Egg Yolks
1/2 Cup Sugar
1 1/2 Tablespoons Flour
1 Cup Scalded Milk

Mix yolks, sugar and flour. Wisk together, slowly add scalded milk and cook in a stainless bowl over a slow simmering pot until volume increases and mixture thickens. Use wooden spoon or rubber spatula and be careful not to overwork. Cool and add lime juice and zest. Cover and refrigerate. Approximate cooking time, 5-7 minutes.

Step Two: Whites

Chill mixing bowl - add whites, salt and cream of tartar. Mix on high speed with an electric mixer or beater. After 2-3 minutes when whites start to thicken, gradually add sugar. Continue to mix 1-2 minutes moreuntil shinny and very stiff peaks are made when you lift out the whip or beater. Cover and chill.

Step Three: Cream

2 Cups of Heavy Cream
Whip cream until thick. Fold whipped whites into pastry cream base. Fold whipped cream into this mixture.
Step Four: Assembling the Mousse
4-5 Drops of Green Food Coloring
2 Cups of Toasted Pistachio Nuts Chopped
9"x13" Shallow Pan
3" Circle Cookie Cutter

Gently fold in green food coloring and chopped pistachio nuts. Pour into shallow pan to 1" thickness. Chill in freezer overnight. Cut into circles with cookie cutter. Serve with raspberry sauce or fresh berries and garnish with a sprig of mint.
